Buying a new camera now would be insane as it would just be outdated in 6 months.
Get something cheap like a DSLR that you can use for some jobs and rent the rest as you need it.
If you can do without carrying the laptop and drives about and just leave them in one spot, like your car, and use that as your base for backing up data.

It's a bit noisy alright, but in my opinion it's useable. There's also noise reduction software like Neat Video which can help.

Nothing wrong with adapters, I don't own any Canon mount lenses.
One for each lens is an easier option and Fotodiox make a good adapter (Although I have to say many 10e ones on ebay do the job...
If you get them in Nikon mount and use adapters, you can use them on more camera bodies. The Nikon mount have manual control of the aperture unlike the Canon mount which is electronically controlled...
